I shot a lot of Turkeys when I lived in Spokane, I smoked all of them for a few hours before putting them in the oven, I think wild Turkey tastes better that way...

I'd also wrap them in Bacon....  LOL....  

I guess it was still good for you....

Our Turkey this year turned out killer, it was super juicy and tasted awesome.  24 hour brine, injection and sit for 3 hours then into the fryer for 45 minutes (12 pounder).....

Sound like a lot of prep work.  I just did the over nigh brine and the cooking of the bird.  The smoked turkey turned out killer.
